Watermelon Salad with Wild Rose, Feta, & Mint
Serves 4-6

The floral brightness of Wild Rose Vinegar balances the sweetness of the watermelon while also bringing out its freshness and flavor. If your melon isn’t too sweet, consider adding a touch of brown sugar to the recipe for maximum effect. We like goat feta and mint for this recipe, but pretty much any herb or cheese you like will be great. Just make sure to serve this salad cold. Very cold. 

Ingredients

1 medium watermelon, cut into large chunks 
150 g feta cheese, cut into cubes   
½ bunch picked mint leaves 
4 tbsp Wild Rose Vinegar

Method

In a bowl, combine the watermelon, cheese, and mint. Add the WildRose Vinegar and toss gently until everything is nicely mixed. Serve cold.
