Tomato, “soy”, & stone fruit salad

Growing up in Turkey, noma chef Nurperi Yigit used to go to seafood restaurants where the delightful side salad was always tomatoes and onions drizzled with a sugary soy dressing. That’s the inspiration here, with our Nordic “Soy” Sauce beautifully bridging the savory and the sweet. 

Ingredients

500 g mixed tomatoes, sliced 
3 nectarines or peaches, sliced 
150 g cherries, pitted and halved 
3 sprigs basil, picked 
3 sprigs mint, picked 
2 pcs whole burrata  
3 tablespoon olive oil  
Salt, to taste  
5 tablespoon Nordic “Soy” sauce  

Method

In a small bowl, whisk together the olive oil and Nordic "Soy" Sauce until well combined. 

Arrange the tomatoes as a base on a large serving plate. Top with nectarines and cherries. Drizzle the dressing generously over the salad, ensuring all ingredients are coated. Season with salt to taste. 

Garnish with basil and mint leaves. Tear the burrata cheese and scatter on top. 

Finish with a final drizzle of olive oil and serve.
